The delicious combination of breakfast and lunch is none other than the amazing meal time called brunch. The Carefree Station Grill and Bar just so happens to have a wide variety of foods on their brunch menu. From a Southwestern flair, with Carne and Egg Fajitas or the Sonoran Stack, to more traditional brunch items like stuffed French toast and Chicken Fried Steak and Eggs and Crepes. And get this, all brunch items are served with a glass of complementary champagne.
Executive Chef for Carefree Station Thomas Nasworthy came to show us some of the scrumptious dishes they make for brunch. These recipes for an authentic Mexican dish, traditional French cuisine and a yummy yogurt treat show Carefree Station's versatility.
Chilaquiles
Ingredients:
5, 6-inch corn tortillas, fried and cut into chips
4 oz. pulled chicken
4 eggs, beaten
½ cup pico de gallo
4 oz. chilaquiles sauce (or your favorite jarred salsa)
4 oz. jalapeno cream (heavy cream and jalapenos)
½ cup shredded lettuce
3 T. sour cream
Pinch Queso Fresco
Oil
Preparation:
Saute first six ingredients in order until tender. Garnish with lettuce, sour cream and Queso Fresco.
Hollandaise Sauce
Ingredients:
½ lb. melted butter
8 egg yolks
2 tsp. Tabasco sauce
½ lemon
2 oz. water
Salt and pepper to taste
Pinch cayenne
Preparation:
Constantly whisk egg yolks, Tabasco, lemon juice, and water over low heat in a stainless steel sauté pan with rounded edges. Continue whisking until slightly thickened then slowly drizzle melted butter into mixture until emulsified. Season with salt, pepper and cayenne to taste.
Yogurt Parfait
Ingredients:
½ cup sugar
½ cup plain yogurt
½ cup mascarpone
½ quart whipped cream
¼ Grand Marnier
1 orange - zest and juice
Berry sauce (any flavor)
Granola
2 cups oats
½ cup raisins
¾ cup coconut
1 cup almonds
1/3 cup honey
1 tsp. vanilla
2 tsp. cinnamon
1/3 cup oil
Granola Preparation: Toss oats, raisins, coconut, and almonds. Mix with honey and oil until mixture is coated. Add cinnamon and vanilla and stir mixture. Spread on greased cookie sheet and bake at 275 degrees until golden brown.
Yogurt Parfait Preparation: Whisk mascarpone and yogurt until smooth. Blend yogurt mixture with Grand Marnier, sugar, orange juice and zest. Add whipped cream and whip until thick. Top yogurt mixture with sliced fruit such as star fruit, kiwi, raspberries, banana or melons, granola, and berry sauce.
