Mom, Dad and kids will be spookily pleased this Halloween with these delicious recipes, including a margarita for the parents and a perfect cheese quesadilla for the kids. Chef Vicki Ochoa, Los Taquitos Mexican Grill, completes the meal with a spicy shrimp that will make Halloween spooktacular this year.
Blood Orange Margarita Recipe
1.5 oz. Tequila
1 oz. Lime Juice
1 oz. Agave Nectar
½ oz. Egg Whites
½ oz. Blood Orange Puree (ex: Perfect Puree from Napa Valley)
Add ice and ingredients to a shaker, shake vigorously for at least 1 minute. Strain into a salt or sugar rimmed glass and enjoy!
The Perfect Cheese Quesadilla in Halloween Shapes (cookie cutters purchased at Fry's Food Stores)
Tortillas
Cheddar and Monterray Jack Cheese
Spread cheese on one side of a tortilla, fold in half, cut w/ cutters and then fry individually in very hot frying pan.
Agua Chiles
1 Lb Raw Shrimp peeled, cleaned and deveined
15 small key limes, juiced
2 Jalapenos, seeded
1 large Cucumber, peeled & diced
1 large Red Onion, chopped
Salt & Pepper to Taste
Blend lime and jalapeno in a blender. Add shrimp and onion. Let sit for 30 minutes in refrigerator. Add cucumber and salt and pepper to taste.
Serve with chips or on a tostada
