PHOENIX - Do you love pancakes? If you have a busy family and are on the run in the morning this Connie In the Kitchen recipe is just for you!
Grab and Go Breakfast Pancakes
Pancake mix (prepared as directed)
Eggs
Cooked Sausage or Ham
Shredded Cheese
Scallions/Peppers/
This is so easy! The secret is not to make your pancakes too thick. Load your griddle with your pancakes leaving 1/2 the space for an equal amount of eggs (you can fry them, scramble them -- whatever you love.) Cook the eggs while one side of the pancake cooks.
Then before you flip your pancake, pick it up, and and another scoop of batter to that place on the griddle.
Top that with your egg, cheese, sausage, onions, whatever you love, and flip your first pancake on top of that so the raw side is on top of the pancake "stuffing".
Turn down the grill a little and let it cook. Once they are finished you can take them off the griddle and slice them like a sandwich. Dip them in syrup or just eat them on the run. Enjoy!
