Wild Horse Pass Hotel and Casino is scheduled to open at the end of October and is proud to offer patrons many exciting and fresh dining options.
One of the most anticipated dining experiences offered will be the first
Shula’s American Steakhouse in Arizona.
In fact, it will be one of only two restaurants of its kind on the west coast.
Shula’s American Steak House is well known for its delectable steaks and has created a reputation of excellence on the east coast.
Previous Miami Dolphins Coach and Owner of Shula’s American Steak House, Don Shula, takes the meat served in his restaurants so seriously that since 1989 Shula’s has partnered with breeders of purebred Angus cattle.
Shula’s team members actually assist in the day to day operations of The Graham Angus Farm in Albany, Georgia who have been in the cattle business since the 1930’s.
Through these methods, he has coined the term “The Shula Cut” which exceeds USDA choice standards and creates “the best steak money can buy,” said Don Shula.
Casinos can often times be overlooked for dining options, but Executive Chef Howard Goodman of the new Wild Horse Pass Hotel and Casino will change that perception in the Valley.
Chef Howard offers the following tips when choosing cuts of steak to cook at home:
- Look for thick cuts.
Steaks less than an inch thick are much easier to overcook.
- Case versus shelf? Ask your butcher. Often times, the meat on the shelf is exactly the same as the meat in the case but may be priced higher.
- Don’t trim the fat.
The fat helps to keep the steak moist and to retain its shape during cooking.
- Know your grades. The lower the grade, the leaner and tougher the beef is.
- Use an instant read thermometer. This ensures your steak is perfectly cooked.
- The award for the juiciest cut goes to Ribeye. This cut is not as tender as loin, but has a more powerful flavor.
