Sweet-and-sour chicken
- 1-1/2 cups sliced carrots
- 1 green bell pepper, chopped
- 1 medium onion, chopped
- 2 tablespoons quick-cooking tapioca
- 3-pound chicken, cut into pieces
- 8-ounce can pineapple chunks, in juice
- 1/3 cup brown sugar
- 1/3 cup vinegar
- 1 tablespoon soy sauce
- 1/2 teaspoon instant chicken bouillon
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground ginger
- 1 teaspoon salt
- cooked rice, for serving
Place first three ingredients into the bottom of a slow cooker. Sprinkle with tapioca. Add chicken. In a separate bowl, combine pineapple, brown sugar, vinegar, soy sauce, bouillon, garlic powder, ginger and salt. Pour over chicken. Cover. Cook on low for 8 hours. Serve over cooked rice. --
