Simple and delicious chicken and yogurt pitas

Chicken and yogurt pitas


This is a great quick meal when there's no time to cook. With some leftover cooked chicken in the refrigerator, you will be able to make the pita sandwhiches in 15 minutes.

Ingredients:
4 cups shredded cooked chicken (from 2 breast halves)
1 cup plain nonfat yogurt (8 ounces)
1 cup mayonnaise
1 cup finely chipped celery
1/2 cup chopped green onion (from 8 whole green onions)
3 tablespoons coarse-grained mustard
1 teaspoon chopped fresh dill
Salt and freshly ground pepper to taster
6 pita rounds, sliced in half across
1 heard of green leaf lettuce
4 tomatoes sliced

Directions:

1. In a medium bowl, combine the chicken, yogurt, mayonnaise, celery, onion, mustard and dill.

Season this with salt and pepper.

2. Line the pita pockets with lettuce and tomato and then fill with the chicken mixture.
Serve!
