Summer Fruit Parfait

All hail mid-summer and its bounty of fresh fruit!

Fruit Mix:
3 tablespoons evaporated cane juice
4 tablespoons cranberry nectar or juice
1 cup diced fresh peaches
1 cup fresh raspberries
1 cup fresh blueberries
1 cup fresh blackberries
Creamy Vanilla Sauce:
1 cup plain Greek style yogurt
3 tablespoons low fat cream cheese
3 tablespoons pure maple syrup
2 teaspoons evaporated cane juice
1/2 teaspoon pure vanilla extract
1/4 vanilla bean, scraped

1. In a large bowl, combine evaporated cane juice, cranberry juice and fruit. Lightly crush the fruit while mixing the ingredients together until evaporated cane juice is dissolved.

2. Blend all ingredients for the Creamy Vanilla Sauce, including the scraped vanilla seed, in a blender until well mixed.

3. Using small parfait glasses, layer 1/2 cup of fruit mix topped with 3 tablespoons of Vanilla Sauce in each glass. End with a dollop of Vanilla Sauce


Makes 8 servings, each containing approximately:
140 calories
28 gm. carbohydrate
1 gm. fat
4 mg. cholesterol
4 gm. protein
125 mg. sodium
2 gm. fiber
