Grilled Beef Tenderloin with Tomato Bleu Cheese Salsa

Tomato Bleu Cheese Salsa:
1 1/2 cups chopped tomatoes
1/4 cup minced red onion
1/4 cup bleu cheese, crumbled
1 tablespoon chopped fresh parsley
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
2 teaspoons fresh lemon juice
Four 4-ounce beef tenderloin fillets
Pinch sea salt
Pinch freshly ground black pepper

1. Preheat grill or broiler.

2. In a medium bowl, combine all ingredients for salsa and mix well. Set aside.

3. Season the fillets with salt and pepper. Grill or broil beef 3 to 5 minutes on each side or to desired doneness.

4. Serve each fillet with ½ cup of salsa.


Makes 4 servings, each containing approximately:
