With summer break just right around the corner for school age kids, busy parents need all the help they can get to prepare nutritious lunches for their children at home that are delicious, easy-to-make, healthy and affordable especially during tough economic times.

Statistics show that children are at increased risk of weight gain over the summer because they may be more involved with sedentary activities like watching TV or playing video games all day.

A study in the American Journal of Public Health found that kids' body mass index increased twice as much during summer break compared to the school year.

The increase was even greater among black and Hispanic students and kids who are already overweight.

Summer is also the time when it's more convenient for families to eat fast food or take out.
