Healthy and delicious! Tomato, watermelon and feta salad

TOMATO, WATERMELON AND FETA SALAD

Yield: 4 people

INGREDIENTS:
2 cups cubed watermelon
2 cups medium diced tomato (seeded)
½ cup shaved red onion
½ cup crumbled feta cheese
3 Tbspn extra virgin olive oil
2 tspn shredded mint
2 tspn shredded basil
Salt and Pepper to taste

PROCEDURE:
1. Mix all ingredients in a bowl.
2. Do not season until ready for service as the salt will take all the juice out of the tomato and watermelon.
3. Split salad into 4 portions and serve.

**This recipe can be accompanied by leafy greens as well such as, arugula, romaine leaves or watercress.
