Watermelon, Jicama and Mango Salad

Serves 6 as a small side

Ingredients:

2 each mango
1 small jicama
1 half of 1 small watermelon, seedless, sweetheart
3-4 ea Lime juice, freshly squeezed
To taste Kosher salt
To taste Chili Powder -chipotle, ancho or other
To taste ground Cumin
1 Tbsp minced Cilantro
1 Tbsp minced Mint
6 leaves Red Leaf Lettuce or Butter Lettuce, leaves separated
1/4 cup crumbled, Cotija cheese (garnish)

Preparation:
1. Peel and julienne mango, jicama and watermelon. Hold separately.

2. In separate bowl, combine lime juice, salt cumin and chili powder. Adjust to taste using mango and jicama to sample.

3. Marinate mango, jicama and watermelon SEPARATELY until ready to serve, at least 1 hour.

4. To serve, place red leaf lettuce or butter lettuce on plate, then layer watermelon, then jicama, then mango, and garnish with minced cilantro and mint.
