The state of our economy has money top of mind for everyone. That includes what we shell out to put meals on our tables for dinner.
It's easy to grab fast food but making dinner with fresh produce along with a few items you already have in your pantry may inspire you to save money by making more meals at home.
Plus--if you're watching your waistline this recipe will tickle your tastebuds and have your family asking for, "more please."
I created this one for a small group last night. The cost? Less than 13 dollars and that was to feed four.
Mozzarella Turkey Sausage PastaIngredients:
Spicy Turkey Sausage (5-6 links)
Fresh Garlic (3 cloves peeled, crushed and chopped)
Fresh Basil Leaves (2 handfuls chopped or torn)
Fresh Roma Tomatoes (5-6 split down the middle and then diced)
Extra Virgin Olive Oil (1/3 cup)
Garlic Salt (to taste)
Shredded mozzarella Cheese (2 Cups)
Pasta Shells
Directions:
Boil Pasta Shells. Heat pan to medium high. Sauté most of the crushed garlic in 1 TSP of heated Extra Virgin Olive Oil for one minute.
Add Spicy Turkey Sausage, sizzle and cover 15 to 20 minutes until meat is completely cooked through.
In a large bowl mix Fresh Basil Leaves, Fresh Roma Tomatoes and what is left of the garlic. Pour in Extra Virgin Olive Oil and toss. Sprinkle Garlic Salt to taste.
With tongs, pull Spicy Turkey Sausage from the pan and slice into small medallions.
Then place the sausage back into the pan briefly along with the mixture of Fresh Basil, Fresh Roma Tomatoes, Fresh Garlic and Extra Virgin Olive Oil.
Mix in Mozzarella Cheese tossing it
only long enough to melt over all of the ingredients combined.
Serve over a small helping of pasta and enjoy.
