Southern Toast
Yield: 4 servings
Ingredients:
6 oz fresh seasonal fruit (per plate)
8 pieces of Texas toast
Egg Wash
6 eggs
4 oz cream
1 teaspoon of cinnamon
1 teaspoon of vanilla extract
mix thoroughly
Orange Cream Sauce (4 oz)
1 oz orange liqueur
1/1 oz orange juice
4 oz cream
Sauce Procedure:
Heat sauté pan to high
Reduce by 3/4’s
Add cream and reduce by 1/3
Southern Toast Procedure:Turn the flat top to high
Dip the toast in the egg wash and place on flat top
Cook the toast to golden brown
Place on plate and top with Orange Cream Sauce
Sprinkle with powdered sugar
Add seasonal fruit to the plate for a side dish
