Ahi Tuna Sashimi
Serves 3-4

INGREDIENTS:

5 oz. Raw Tuna
1 cup Cabbage
1 oz. Wasabi
1 oz. Pickled Ginger
2 oz. Soy Sauce
2 oz. Sesame Ginger Dressing
1 oz. Green Onions - Diced
2 oz. Black & White Sesame Seeds

INGREDIENTS: Ahi Wash

1 ea Raw Egg
1 oz. Teriyaki Glaze

PROCEDURE

1. Mix egg and Teriyaki sauce
2. Put Tuna with wash and cover with seeds
3. Sear in sautee pan with hot oil (30 seconds each side)
4. Slice Ahi into thin pieces and place on top of cabbage
5. Decorate plate with Wasabi, Ginger and sauces
6. Top with Green Onions
