Seared Ahi Tuna

Yields 6 servings

Ingredients
Ahi Tuna
6 pieces Ahi Tuna (6 oz. each)
½ cup Miso Caramel
1 cup Snap Peas (Blanched)
1 cup Baby Turnips
1 cup Baby Leeks
¼ cup Olive Oil

Miso Caramel
1 cup Orange Juice
1 tsp Chili Paste
1 cup Granulated Sugar
1 tsp Rice Vinegar
2 tbsp Soy Sauce
1 tsp Miso Paste

Preparation
Ahi Tuna
Season tuna with salt & pepper & pan sear with ½ the olive oil. 

Sear on each side for 10-15 seconds.

Heat remainder of oil in sauté pan, add vegetables. 

Cook until hot & tender.


Miso Caramel
Add orange juice, chili paste, granulated sugar, and rice vinegar to a sauce pan.

Bring to a boil and lower to a simmer.

Reduce to a light caramel consistency.

Add soy sauce and miso paste.


To Assemble
Lay vegetables on a plate in six equal portions and top with one piece of Ahi Tuna. Drizzle with soy caramel.
