Make peanut butter cups for Halloween or anytime!

When you want to entertain many hostesses have all the best intensions and creativity and none of the time. And that’s especially true at Halloween when the little trick-o-treaters in your life also need a costume, and in a hurry!

Sandra Lee, cook and author of Semi-Homemade Desserts 2 has a knack for satisfying one’s sweet tooth without starting from scratch in the kitchen. She applies a tried and tasted recipe of 70% ready-made foods with 30% fresh ingredients to create 100% - Halloween screams of delight.

Peanut Butter Cups
Prep: 25 minutes
Bake: 15 minutes
Chill: 5 minutes
Makes: 18 cups

1 pouch ( 10.25-ounce) fudge brownie mix, Betty Crocker
1 egg
1/3 cup butter, cut into small pieces
¼ cup creamy peanut butter, Skippy Natural
½ 3-ounce package (1.5 ounces total) cream cheese, softened, Philadelphia
2 tablespoons sugar
1 tablespoon whipping cream

1. Preheat oven to 350 degrees F. Spray eighteen 1 3/4 –inch muffin cups with cooking spray

2. In a large bowl, combine brownie mix, egg and butter pieces, stirring with a wooden spoon until well mixed and no butter pieces remain. (Mixture should be thick like cookie dough; chill in refrigerator if necessary)

3. Scoop 1 tablespoon of the brownie mixture into one of the muffin cups. Gently press into bottom of the cup. Repeat to make 18 cups. Bake in preheated oven for 15 minutes.
4. Remove pans from oven; chill about 5 minutes or until centers of brownie cups sink slightly.

5. In a medium bowl, combine peanut butter, cream cheese, sugar and whipping cream; beat with an electric mixer on low speed until smooth. Insert a small star tip into the bottom of a pastry back. Spoon peanut butter mixture into pastry bag and pipe into each cooled brownie cup.

Note: If you do not have a pastry bag, spoon peanut butter mixture into a large zip-top bag. Press out air and seal. Hold zip-top bag like a pastry bag and carefully snip off one corner. Insert corner of bag into the center of each brownie cup, squeeze to fill cup with peanut butter mixture. If desired, create a swirl at the top of cup.
