Cool down with refreshing coconut frozen yogurt

If you're melting in the summer heat... cool down! Try out this recipe, from The Wine Club: a month-by-month guide to learning about wine with friends,


Ingredients:
1 cups fat-free coconut yogurt
1 14-ounce can light coconut milk
1/2 cup light colored corn syrup

Directions:

1. In a bowl combine yogurt, coconut milk and corn syrup. Cover and chill for at least 2 hours or until the mixture is 40 degrees or below.

It is very important to chill the mixture before you put it in your ice cream freezer!

2. Put mixture in an icre cream freezer and freeze according to manufacturer's directions. 

Transfer mixture to a freezer container; freeze for 2 to 4 hours before serving.

(After freezing this mixture for a few hours, the texture is perfect-just like out of a soft-serve machine. After freezing overnight, it is very sold. Be sure to pull it out of the freezer and let stand before you scoop)

Makes about 4 cups.
