Caramelized Apples, Goat Cheese and Honey

Caramelized Apple, Goat Cheese and Honey on Toasted Cranberry Hazelnut Bread

Yield 25 pieces

Ingredients
9 slices, 1/4 inch thick Cranberry Hazelnut Bread or Walnut Bread, cut in 25 1-inch squares
1 large or 2 small Granny Smith Apples, peeled, small diced
2 T Unsalted Butter
Kosher salt
1/3 cup Goat Cheese, room temperature
Honey to drizzle
Garnish Micro Mint or Fresh Mint leaves chiffonade
Garnish Fleur de Sel

Preparation
1. Toast bread in a preheated 350 degree oven until crisp. Remove and, while toast is still warm, spread with a little goat cheese.

2. Heat a medium sauté pan over medium high heat with 2 T unsalted butter. Allow butter to melt completely. After the foam from the butter has subsided, add the apples to the pan and cook over medium high heat for 5-7 minutes, or until softened. Season lightly with kosher salt.Raise heat slightly and cook apples, without moving them, for two minutes. Shake pan gently and cook apples without moving them for two more minutes. Apples will be caramelized.

3. Portion apples among each goat cheese toast. Drizzle apple with a little honey and garnish with micro mint and a little fleur de sel.

4. Serve chilled or at room temperature.
