Tuscany at McCormick Ranch showed us how to serve it up in this recipe.
Citrus Salmon with Quinoa and Swiss ChardServings: 4
2 cups orange juice
1 lime juice & zest
1 shallot, minced
1 tablespoon ginger, minced
1 tablespoon orange marmalade
dash salt & pepper
1 cup black raspberries, whole
4 4 ounce salmon fillets
1 cup red quinoa
2 cups water
1 112 pounds swiss chard leaves
2 cloves garlic
1 112 tablespoons vegetable oil
dash salt & pepper
In a 2 quart sauce pot, combine juices, zest, ginger, shallots.marmalade salt and pepper.
Simmer 10 minutes, remove from heat and let cool.
Marinate fish in 2 ounces juice mixture for 30 minutes.
Preheat convection oven to 350 degrees.
In a 1 quart sauce pan bring water to a boil and add Quinoa.
Cook covered for 15 minutes, remove from heat and let cool for ten minutes.
Add cilantro and remaining marinade less two tablespoons to cooled Quinoa and mix thoroughly.
Place fish fillets on prepared baking pan with marinade.
Place in oven and bake for approximately ten minutes.
Heat vegetable oil in a medium sauté pan. add garlic and cook 20 seconds, add chard salt & pepper cook covered 2 minutes until wilted.
Place sautéed chard onto 4 dinner plates
Spoon cooled quinoa onto cooked Chard, then top with cooked salmon.
Garnish with berries and oranges and drizzle with remaining juice mixture.
