Recession buster: Cheap, fast recipe for shrimp fried rice
Everyone’s trying to save a buck or two at dinner time and my son loves Shrimp Fried Rice.
I put together this meal in under 30 minutes for under 15 bucks and not only will it feed a family of four but it also tastes pretty yummy (so says my son). You can always leave out the mushrooms if your kids don’t like them.

Ingredients Needed:
2 6.2 ounce boxes of Rice a Roni Fried Rice Shopping Tip: On sale $1.00 box at Wal-Mart ¼ teaspoon each Salt, Pepper, and Garlic Powder (to season the shrimp when sautéing)2 14.6 ounce packages of frozen cleaned uncooked shrimp, thawed (41/60 shrimp per pound - already deveined) Shopping Tip: On sale $4.00 pk. at Wal-Mart
1/4 cup of slices green onions Shopping Tip: $1.00/bunch Wal-Mart Small jar of sliced mushrooms (you can also use a cup of fresh mushrooms, just slice them and sauté them in with the shrimp) 3 Eggs (beaten)
4 teaspoons Butter
2 teaspoons Extra Virgin Olive Oil or Vegetable Oil
Preparation:
1. Prepare the fried rice as directed on the package. Remove from the skillet and set aside. It should take about 15-20 minutes. 2. Clean your shrimp (take the shell off, but be sure to buy the kind that is uncooked and deveined. Please don’t use cocktail shrimp, it really ruins the taste).3. Sautee the shrimp with the olive oil, pepper, salt, garlic powder and the green onions. 4. If you are using fresh mushrooms sauté them with this mixture as well. If not throw in the precooked mushrooms during the last minute of the sautéing process.Drain the excess juice from the pan.
5. Scramble your eggs in a skilled and add to the sautéed shrimp and veggie mixture.
6. When your rice is fully cooked, mix the shrimp, veggies and eggs all together.
