Wow you missed a lot! I've actually visted Tequila Mexico there is a lot of talk about what is true Tequila! Some say the Agave plant must grow to 8 years before they should be picked. Some of the popular brands blend there so called Tequila picking the Agave plant at 5 years. So how does the process work? Mezcal is the first of the distilled spirit. Blanco in true form is unaged and at the end of the distilled process. Reposado's and other darker Tequila's are aged from 11 months and so on. True Tequila is not blended the agave plant is alowed to grow for 8 years and uses 100% blue agave. Now you can use your see, smell, sip, and Savor.
