Beat the heat with a mocktail

You're lounging poolside and you want something refreshing to drink.  So what do you do?

You could grab a bottle of wine, or bust out the blender and make daiquiris, but sometimes having an adult beverage just isn't desirable.

So when you're getting those cravings, try one of these adult inspired 'mocktails' provided by Phoenix Drinks Examiner, Mark Nothaft.

So-Cal Wave

Ingredients:
3 ounces cranberry juice
3 ounces pineapple juice
1/2 ounce lemon juice
Ice
2 ounces club soda
Lime wedges

Preparation:
Combine juices with ice in a shaker.
Shake vigorously and strain into highball glass with ice.
Top with club soda and stir.
Garnish with lime wedge.



Mark's Ultimate Iced Tea

Ingredients:
1 lemon, lime or orange (depending on preference)
12 tea bags
1 sprig of mint
64 ounces boiling water
1 cup simple syrup
Ice for serving
Mint leaves and lemon or orange slices for garnish

Preparation:
Peel lemon or orange, cut into cubes and drop into pitcher with mint sprig and tea bags.
Pour in boiling water and allow bags to steep for 10 minutes, occasionally stirring.
Remove tea bags and discard. Add simple syrup, stir and refrigerate until cool.
Pour chilled tea over ice in cooler or iced tea glasses.
Garnish with an orange or lemon slice and mint leaf.



Sunshine Splash

Ingredients:
3 ounces pineapple juice
3 ounces orange juice
1 ounce sweet and sour mix
1/2 ounce grenadine
Ice
2 ounces lemon-lime soda
Pineapple wedges

Preparation:
Combine juices, mix and grenadine in a shaker with ice.
Shake vigorously and pour over ice in a cooler glass.
Add lemon-lime soda, stir and garnish with pineapple wedge.



Grape-cicle

Ingredients:
1/2 cup Concord grape juice
1 scoop vanilla ice cream
3 ounces crushed ice
Whipped cream

Preparation:
Combine grape juice, ice cream and ice into a blender and whip until smooth.
Pour into wine or hurricane glass and top with a dollop of whipped cream.



Strawberry Colada

Ingredients:
6 frozen strawberries
3 ounces pineapple juice
1 ounce coconut milk or cream
2 ounces crushed ice
Fresh strawberry and pineapple wedge for garnish

Preparation:
Combine frozen strawberries, pineapple juice, coconut milk and ice into a blender and whip until smooth.
Pour into hurricane glass and garnish with fresh fruits
