"Our story begins in Maui, Hawaii where we lived for 27 years raising a wonderful family," owner Michael Beck said.
Beck continues:
In 2003, my wife asked me to help her open a vegetarian, vegan restaurant and feed locals and tourist great tasting healthy food. Almost at once, we became a hit and found ourselves inspired to see the results and hear the customers’ comments. After about a year operating our first Fresh Mint in Paia, Maui, we opened our second Fresh Mint in Kahului. In 2007 our daughter informed us she would like to attend college on the Mainland so we decided to follow her, sell the restaurants and relocate to Scottsdale, Arizona.
After a period of time searching for the right location, we opened our third Fresh Mint at its present location. Shortly after opening, several Jewish customers asked us to become kosher and due to our type of menu, it was fairly easy to be certified. So our first Mainland Fresh Mint is a vegetarian, vegan, kosher restaurant.
We’re a true family run business operating a one hundred percent vegetarian, vegan, kosher restaurant. We greet each customer with the aloha spirit and share stories of our island life. My family just reminded me to mention how flexible we can be with our menu. You see, nothing is made until you order it at Fresh Mint.
That way we can guarantee freshness and make any special changes requested by our customers. In the 18 months since opening, we’ve been voted best vegetarian restaurant by 3 different publications, published about 15 times and several television host, sports stars and actresses have dined at Fresh Mint.
