Boasting stunning views, architecture inspired by Michelangelo, and a Spanish inspired menu
Prado restaurant is a sight to behold.
Named after Spain’s most important museum and art gallery, Museo Nacional del Prado in Madrid, the names reflect the prized piece of land they rest upon.
Prado restaurant is nestled in one of the most coveted areas of the Valley, in the heart of Paradise Valley at the
InterContinental Montelucia Resort & Spa.
With its stunning views of Camelback Mountain, lush desert landscape, resort pool, and fountain it doesn’t take long to understand this restaurant lives up to its name.
The architecture also doesn’t disappoint, with an elegant atmosphere inspired by the design of the Villa San Michele restaurant, originally designed by Michelangelo in Tuscany, Italy.
The décor also speaks of Europe, with exposed beams, weathered plaster walls, iron chandeliers, antiqued mirrors, aged leather and wood, stone and wood floors.
A large rustic, brick-lined open wood fired oven is the centerpiece of the restaurant with chefs preparing menu items on a large dark wood table directly in front of the fire.
The menu is inspired by the wood fired grill, featuring the freshest seafood, meats, and produce cooked on a grill over a wood burning fire.
Traditional Mediterranean flavors merge with Spanish accents using fresh ingredients for the menu items.
“The concept of Prado is simple,” said Claudio Urciuoli, Chef de Cuisine of Prado. “We focus on the ingredients and we stay true to the essence of the cuisine to create memorable and delicious food.”
Some of Prado’s signature dishes include,Yellow and Red Gazpacho ($7) a unique take on a Caprese salad with Burrata cheese and radicchio ($15), New Caledonian Prawns with Rosemary and Controne beans ($15), a daily traditional Paella for two ($29), Grilled Prime Rib Rye, with Burrata fresh cheese and a piperade sauce ($31), a daily Lamb Trio ($28), an ever-changing Tapas menu, and other specialties from the wood-fired grill.
Other offerings include pastas and fideos, grass-fed beef and meats, fresh seafood, and fresh seasonal produce that is locally-grown whenever possible.
Prado also offers an accessible and ever-changing list of wine by the glass and bottle for guests to enjoy while dining.
For a connoisseur wine experience, Prado also features the King Ferdinand’s Cellar reserve wine collection with more than 300 bottles of wine from around the world.
Of particular note is the more-than-150-bottle broad and deep collection of Spanish wines, the most comprehensive collection in Arizona.
“We intend for Prado to become one of the favorite restaurants in Scottsdale for locals that will bring them in every week, and solidify the restaurant as a must-try for visitors,” said Valeriano Antonioli, Managing Director of InterContinental Montelucia Resort & Spa.

An interactive Kids Club is available for guests dining in Prado.
Monday through Thursday evenings it is complimentary for up to three hours, $30 per child, plus $5 for a meal Friday, Saturday and Sunday.
